I don't think you can really modify vertex normals that easily since they're computed from the normals of the adjacent geometry, but I think your problem comes from elsewhere. Sometimes when you import meshes from other softs in Blender, they come with custom split normals, which cause very weird shading. One solution is to clear the data in the mesh properties :
